Fresh milled flour keeps the whole grain – along with nutrients that are often reduced or lost in store-bought flour.

What are the Benefits of Fresh Milled Flour?
Fresh milled flour includes the entire wheat kernel – bran, germ, and endosperm – which means it contains fiber, vitamins, minerals, fats, and starch all working together.
Because nothing is removed, fresh milled flour keeps the full nutrient profile of the grain intact – rather than reducing it through processing.
At a practical level, these nutrients affect how your body responds to food:

What’s in the Bran (and What It Does)
The bran is the outer layer of the wheat kernel. It provides fiber and many important minerals.

How These Nutrients Translate to Benefits
Fresh milled flour contains nutrients from the entire grain, which means each part contributes to how your body processes it.
The bran provides fiber that supports digestion and helps regulate how quickly food is broken down.
The germ provides vitamins, healthy fats, and antioxidants that support overall cell function.
The endosperm provides energy and structure, allowing the flour to perform in baking.
When flour is made using only part of the grain, the nutrient profile of the flour changes – and so do its overall benefits (see → Fresh-Milled vs Store-Bought Flour).
Because all three parts remain together, fresh milled flour provides more nutrients than flour made from only part of the grain.
That raises a natural question – how much of a difference does that actually make?
How Many Essential Nutrients Does Whole Wheat Provide?
Your body depends on nutrients it cannot make on its own, which must come from food. These are called essential nutrients.
There are about 40–45 essential nutrients. Using that framework, whole wheat contains about 23 essential nutrients – including all essential amino acids. That’s more than half of the essential nutrients your body depends on.
Refined white flour contains closer to 9 after processing (see → How Flour is Processed).
Enriched flour adds back a small number of nutrients that were originally present in the grain but removed during milling or reduced over time (see → Does Flour Lose Nutrients Over Time). After enrichment, about 14 essential nutrients remain. These are added from external sources in isolated form rather than as part of the whole grain’s original structure.
(In this post, nutrients are counted when a substantial portion remains. Nutrients that are reduced by roughly 70% or more during processing are not included. Small trace amounts of additional nutrients may still be present, but are not included here due to their low levels.)

In the 1940s, iron and B vitamins (B1, B2, and B3) were added back to refined flour in the U.S. to address nutrient deficiencies – such as anemia (iron), beriberi (B1), and pellagra (B3) – that became more common with widespread flour processing.
In the 1990s, low folate levels were linked to neural tube defects like spina bifida, leading the U.S. to require folic acid (a synthetic form of folate) to be added to refined grain products in 1998.

What Nutrients are in Whole Wheat Flour?
Whole wheat retains a broad range of essential nutrients. Refined flour removes a large portion of them – and only adds a few back.
