- Cinnamon Rolls
- ½ ounces instant yeast
- 2 cups milk
- 1 cup sugar
- ⅔ cup butter, softened
- 2 teaspoons salt
- 8 cups all-purpose flour (or bread flour)
- optional: ½ cup whipping cream per 9 x 13 baking dish
- Filling
- 1 cup butter, well softened (2 sticks)
- optional: 1 tablespoon instant clearjel
- 2 ½ cup brown sugar
- ½ cup cinnamon
- Icing
- 12 teaspoons butter, softened (1 ½ sticks)
- 3 cups powder sugar
- ½ cup cream cheese
- 1 teaspoon vanilla
- ¼ teaspoon salt
Instructions
- Cinnamon Rolls
- Heat milk and butter in a saucepan on the stove until 110 degrees.
- Transfer the warm mixture to the bowl of a stand mixer fitted with a dough hook attachment.
- Add yeast to the bowl. Wait a few minutes to see the presence of bubbles (tells you the yeast is active).
- Add sugar and lightly mix.
- Add salt and 2 cups flour and mix until combined (starting slowly to avoid sloshing).
- Add one cup of flour at a time once the dough has absorbed the previous.
- Once all flour has been incorporated, mix on medium-high until dough has started to pull away from the sides of the bowl. You will see the sides of the mixing bowl become ‘clean’ as the dough pulls away.
- Take the dough out and spread on a clean, flat countertop. You can lightly flour the counter if desired.
- Filling
- Spread well softened butter over rectangle of dough.
- If using, sprinkle with instant clearjel.
- Mix brown sugar and cinnamon until well combined.
- Sprinkle over the cinnamon roll dough.
- Rolling and Baking Cinnamon Rolls
- Preheat oven to 350 degrees.
- Butter 2 – 9 x 13 pans to prepare for baking.
- Roll the cinnamon rolls from the long edge.
- Cut the cinnamon rolls to about 1 ½ inches and place in a baking dish.
- Optional: If you want a gooey-er roll, pour ½ cup (per 9 x 13 pan) whipping cream over the rolls before baking.
- Bake for 20+ minutes at 350 degrees until lightly golden brown.
- Icing (prepare while rolls are baking)
- Cream the butter and cream cheese until well combined.
- Add salt and 1 cup powdered sugar.
- Mix until well combined (start slow so you don’t get a puff of sugar).
- Add vanilla and ½ cup powder sugar and mix until well combined.
- Add powdered sugar ½ cup at a time and continue mixing, adding ½ cup until all powdered sugar is incorporated.
- Let the cinnamon rolls cool slightly, then top with icing.
