Description
Easy and delicious everyday granola recipe. Great for a on-the-go snack, with yogurt and berries for parfaits or with milk for a homemade cereal.

- 42 ounce old-fashioned rolled oats (not quick oats)
- 16 ounces pecan pieces (or 3 ½ cups)
- 1 ½ tablespoons salt
- 1 tablespoon ground cinnamon
- 1 teaspoon nutmeg
- 14 ounces melted coconut oil (or 1 ¾ cups)
- 1 3/4 cups maple syrup
- 1 ½ tablespoons vanilla extract
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix oats and pecans together until well combined.
- In a small bowl, mix together salt, cinnamon and nutmeg.
- In a medium bowl, mix together maple syrup, vanilla and melted coconut oil.
- Pour salt, cinnamon, nutmeg mixture over the top of the oat, nut mixture and mix well until distributed evenly.
- Pour maple syrup, vanilla and coconut oil mixture over the top of the oat, nut mixture and mix thoroughly with a spatula until all oats are coated with the liquid mixture.
- Line two half baking sheet pans with foil.
- Spread mixture evenly over the two baking sheets.
- Bake in oven for 15 minutes.
- Take out the pans, re-distribute the granola so that the granola browns more evenly and doesn’t burn.
- Place the pans back in the oven switching the pans so that the pan that was on bottom is now on the upper rack and the pan that was on the upper is now on the bottom for even browning.
- Bake again for 15 minutes or until the top of the granola starts to brown slightly.
