Crockpot Potato Soup Recipe

Ingredients

  • 56oz Potatoes O Brien, frozen (2 28oz packages)
  • 5 cups water
  • 2 tablespoons better than bullion
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 cloves garlic, minced
  • 1 stick of butter (8 tablespoons)
  • 5 tablespoons wheat berries (~8 tablespoons flour)
  • 2 cups whole milk
  • ½ cup greek yogurt (or sour cream)

    • cheese
    • bacon
    • green onion


Instructions

  1. Combine frozen potatoes o brien, water, bullion, salt, pepper and minced garlic in a crockpot.
  2. Cook on low for 4 hours (or high for 2 hours) until the potatoes are soft.
  3. Make Roux:
    1. Melt butter in a pot.
    2. Add the flour and whisk until combined.
    3. Add the milk half a cup at a time whisking in between each add. You are whisking until you see the mixture thicken each time.
    4. Once combined, turn off the heat and add the greek yogurt to the roux.
  4. Add the roux to the crockpot and cook for another 30 minutes to an hour on high.
