- 56oz Potatoes O Brien, frozen (2 28oz packages)
- 5 cups water
- 2 tablespoons better than bullion
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 cloves garlic, minced
- 1 stick of butter (8 tablespoons)
- 5 tablespoons wheat berries (~8 tablespoons flour)
- 2 cups whole milk
- ½ cup greek yogurt (or sour cream)

Instructions
- Combine frozen potatoes o brien, water, bullion, salt, pepper and minced garlic in a crockpot.
- Cook on low for 4 hours (or high for 2 hours) until the potatoes are soft.
- Make Roux:
- Melt butter in a pot.
- Add the flour and whisk until combined.
- Add the milk half a cup at a time whisking in between each add. You are whisking until you see the mixture thicken each time.
- Once combined, turn off the heat and add the greek yogurt to the roux.
- Add the roux to the crockpot and cook for another 30 minutes to an hour on high.
- Prep Time: 15 minutes
- Cook Time: 4.5 hours
