These easy fresh-milled whole wheat waffles are crisp on the outside, soft inside, and made with simple pantry ingredients. The extra butter helps create crisp edges, while freshly milled soft white wheat keeps the waffles flavorful without making them heavy.
How This Fits Into Our Routine
These waffles use the same simple base as our easy fresh-milled whole wheat pancakes, which means we usually already have everything needed to make them. Waffles take a little longer than pancakes, but the crisp edges are worth it.
Why We Make These
- Simple pantry ingredients
- No buttermilk or specialty ingredients

Ingredient Notes
Soft White Wheat Berries
Soft white wheat works especially well for waffles because it creates a softer texture than harder wheat varieties while still giving you the flavor of fresh whole grain flour. If you’re still deciding which grains to keep stocked, see my guide to the best wheat berries for pancakes, since many of the same grains work well for waffles too.
Butter
The additional butter helps the waffles crisp more easily while keeping the inside soft.
Baking Powder
Baking powder provides the lift in this recipe and helps create a lighter waffle texture. If you want a deeper explanation of how leaveners affect texture and rise, see what baking powder does in pancakes.
Fresh-Milled Flour
Freshly milled flour absorbs liquid differently than store-bought flour, so the batter thickens slightly as it rests. See: Fresh Milled Flour Hydration
Homemaker Science
What makes this work
- Fresh-milled flour absorbs liquid differently than store-bought flour, so resting the batter helps the flour fully hydrate. See: Fresh Milled Flour Hydration
- The additional butter helps create crisp edges while keeping the inside soft.
Homemaker Notes
The practical details
- Letting the batter rest for a few minutes improves the texture and helps the waffles cook more evenly.
- If the waffles soften as they cool, placing them briefly on a wire rack instead of stacking them helps keep the edges crisp.
- This recipe uses the same base as our easy fresh-milled whole wheat pancakes with a little extra butter added for a crispier waffle texture.
