We make this recipe regularly when we have extra bread on hand. It works especially well with slightly day-old bread, which absorbs the egg mixture without falling apart.

Can You Make French Toast with Whole Wheat Bread?
Yes. Whole wheat bread works very well for French toast.
Many recipes use brioche or white bread, but homemade whole wheat bread gives you flavor and a heartier texture. The key is using bread that is slightly dry or a day old. Fresh bread can absorb too much liquid and become overly soft, while day-old bread holds its shape better during cooking.
A soft sandwich loaf works especially well because it absorbs the egg mixture evenly while still staying tender in the middle.

Why Day-Old Bread Works Better
Slightly dry bread is often the best choice for French toast.
As bread sits for a day, some of its moisture evaporates. That allows it to soak up the egg mixture without becoming mushy. Fresh bread can still be used, but day-old bread usually produces a better texture.
