Shredded Chicken Recipe – How to Cook with an Instapot

Ingredients

  • 8 lbs frozen chicken breasts
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 teaspoon onion powder (not onion salt)
  • 1 teaspoon garlic powder (not garlic salt)
  • 4 cups water


Instructions

  1. Place frozen chicken in instapot and move it around so it is more condensed and fits better.
  2. Add spices on top of chicken.
  3. Pour water over the spices to distribute the spices.
  4. Turn on the instapot to pressure cook for 20 minutes. (It will take about 1 hour to cook.)
  5. Once done, let it release naturally for 10 minutes, then release the pressure.
  6. While the chicken is hot, remove the chicken with tongs a few breasts at a time into a mixing bowl or the bowl of a stand mixer.
    1. If using a stand mixer, mix with the paddle attachment for a few seconds until the chicken is your desired level of shredded. If you mix just a few rotations you will get longer pieces of chicken, if you mix longer, you will get smaller, more moldable shredded chicken.
    2. If not using a stand mixer, use two forks to shred the chicken, it will shred easily when hot.

Notes

To make this full recipe in one go, you will need the biggest, 8 qt instapot.

Once made, portion shredded chicken into baggies, I do 4 cups each in a quart freezer bag. Utilize for quick meal prep in the future!
