- 8 lbs frozen chicken breasts
- 1 tablespoon salt
- 1 tablespoon pepper
- 1 teaspoon onion powder (not onion salt)
- 1 teaspoon garlic powder (not garlic salt)
- 4 cups water
Instructions
- Place frozen chicken in instapot and move it around so it is more condensed and fits better.
- Add spices on top of chicken.
- Pour water over the spices to distribute the spices.
- Turn on the instapot to pressure cook for 20 minutes. (It will take about 1 hour to cook.)
- Once done, let it release naturally for 10 minutes, then release the pressure.
- While the chicken is hot, remove the chicken with tongs a few breasts at a time into a mixing bowl or the bowl of a stand mixer.
- If using a stand mixer, mix with the paddle attachment for a few seconds until the chicken is your desired level of shredded. If you mix just a few rotations you will get longer pieces of chicken, if you mix longer, you will get smaller, more moldable shredded chicken.
- If not using a stand mixer, use two forks to shred the chicken, it will shred easily when hot.
Notes
To make this full recipe in one go, you will need the biggest, 8 qt instapot.
Once made, portion shredded chicken into baggies, I do 4 cups each in a quart freezer bag. Utilize for quick meal prep in the future!
