Healthier Chocolate Chip Cookie Recipe with Fresh Ground Whole Wheat Flour

A healthier everyday chocolate chip cookie recipe using fresh ground soft white wheat berries.
Ingredients

- 1 ½ cups butter, softened
- 1 ½ cups brown sugar
- 4 eggs
- 1 tablespoon vanilla
- 4 cups soft white wheat berries (measure 4 cups of unground berries, you will grind them in the recipe)
- 1 ½ teaspoon baking powder
- ½ teaspoon baking soda
- 2 teaspoons salt
- 2 cups chocolate chips (if you love chocolate chips, go up to 3 cups)
Instructions
- Cream butter and brown sugar until light and fluffy.
- Add eggs and vanilla and mix lightly.
- Add baking powder, baking soda and salt and lightly mix. (Technically you should add this to the flour and mix before adding to the whole but I do this to save a step.)
- Grind the 4 cups soft white wheat berries with your grain mill directly into your mixing bowl.
- Mix until just combined.
- Add chocolate chips and very lightly mix to distribute.
- Scoop into cookies.
- Let sit for 15 minutes in the fridge.
- Preheat oven to 350 degrees.
- Bake at 350 degrees for 7-12 minutes depending on your oven and cookie size. Watch for light browning or cracks to form on the top of the cookies as they approach doneness.
Notes
If you do not have a grain mill, you can substitute the wheat berries for 6 cups of whole wheat flour. This recipe was created with fresh ground whole wheat flour which performs different than store bought.
I often bake some and freeze the rest. For optimal freezing, refrigerate for 2 hours, then freeze, this allows the flour to absorb the moisture before you freeze the cookies.
