French Toast Recipe with Fresh Ground Flour (No Sugar Added)

Description

A weekend staple recipe in our family using fresh ground flour and bread made with fresh ground flour.


Ingredients

Scale
  • 1 loaf of homemade bread (use a loaf from this → 100% whole wheat bread recipe)
  • 8 eggs
  • 1 ⅓ cup milk
  • ¼ cup wheat berries (measure unground, the grind into fresh flour)
  • ½ teaspoon salt
  • 1 tablespoon cinnamon
  • 1 tablespoon vanilla
  • ½ teaspoon nutmeg


Instructions

  1. Slice bread to desired thickness. (I aim for 10-12 slices per loaf.)
  2. In a mixing bowl, combine milk, eggs and spices.
  3. Grind wheat berries into fresh flour and add to mixing bowl.
  4. Mix until flour is distributed.
  5. Pour into a small baking dish. (Make sure it will fit your sliced bread.)
  6. Heat griddle over medium heat.
  7. Butter griddle, then place soaked bread slice on griddle.
  8. Watch for doneness on first side, then flip until done on second side.
  9. Add more butter to the griddle with each new batch and continue cooking all slices.

Notes

For best results, use bread that is slightly dry or a day old.

Pro Tip: Let cool on a wire rack so they don’t get soggy while cooling off.
